Blueberries have an intriguing history, as they’re native to North America and have been enjoyed by indigenous people for millennia. These little gems are known for their vibrant blue-purple hue and a taste that’s both sweet and slightly tart. But there’s so much more to them!

They are covered in a protective coating of powdery epicuticular wax, colloquially known as the “bloom”. Chemically, it consists of hydrophobic organic compounds, mainly straight-chain aliphatic hydrocarbons. The main functions of the epicuticular wax are to decrease surface wetting and moisture loss. Other functions include reflection of ultraviolet light, assisting in the formation of an ultra-hydrophobic and self-cleaning surface and acting as an anti-climb surface.

But what’s Verjus, you ask? Verjus, or “green juice” in French, is a unique and tangy elixir made from the juice of unripened grapes. It adds a delightful zing to this jam, balancing the sweetness of blueberries with a hint of acidity. Together, they create a well balanced blend of flavors that can elevate your morning toast or cheese platter to a whole new level.
